This is Chimney Rock's best Stags Leap Cabernet since the 2005, and continues a string of successful vintages. Dry and smooth and silky in the mouth, it's pretty tannic, but very rich, offering waves of cherry, blackberry, blueberry, cocoa and sweet cedar flavors. Absolutely delicious, wonderfully elegant, and should age well for a decade."

Cabernet Sauvignon is the quintessential wine of Chimney Rock. Those of us fortunate enough to be located in the Stags Leap District have a distinct advantage when it comes to growing the "king of grapes." The Stags Leap District is the first viticultural area in the United States to be approved based on the distinctiveness of its soils. At barely a mile wide and three miles long, the district is tiny but obviously capable of growing superb wine grapes.

If you are familiar with the lush, opulent style of Stags Leap District Cabernet you'll recognize that our 2007 Cabernet more than meets expectations. This graceful and approachable wine will create a memorable wine drinking experience and is ready to open with upcoming holiday meals. This wine serves as a preview into the terrific wines we have made from the well-regarded 2007 vintage.

The color is deep ruby red. The aroma is of cassis, blackberries and plums along with vanilla, mocha and clove. There is unquestionable richness in the palate. Full burst of beautiful fruit followed by mid palate unctuousness. The finish is long and very, very silky.
